Vegetarian Carrot Cake 0

I’m a huge fan of cupcakes especially if it has vegetables in it, because its better for you, so you can have more than one slice! (If that was only true.) My favourite carrot cake, at the moment, isĀ  at Cedele.

But I wanted to come up with my own version of a vegetarian carrot cake. Why vegetarian? Well, why not?

The cream cheese frosting is actually white - I should have taken a better photo.

img_5215Sixteen cupcakes for a sweet 16th. These cupcakes are red velvet and frosted with cream cheese frosting. A very popular combination, although you could have vanilla frosting instead.

This is a great alternative to an actual cake – but the only thing is I’m not sure they would be any left overs. You all may have to fight who gets the last one.

The theme colours for this baby shower was pastel purple and green. The final resut was a 7 inch cake covered in fondant, decorated with royal icing ruffles (around bottom of cake) with edible baby booties as a topper decorated with buttercream.

This cake was a diabetic orange almond with a diabetic orange curd filling. The diabetic version tastes just as good as the original version!

Alternatively these cute looking booties could be done in a bigger version just to be different.

I am a huge fan of cupcakes and always love thinking how to design each one – my contribution to the art world you could say!

These were 3 different flavours: chocolate with yellow buttercream, vanilla with vanilla buttercream and red velvet with a mix of cream cheese and buttercream.

A stunning looking cake, decorated with whipped cream piping to give it that detail. I would actually recommend doing this in a buttercream icing to get a better finish.With whipped cream you always worry about the colour bleeding, especially since it has to be put in the fridge.

I changed the design on my original cake pops and here is what I came up with. A very unusual looking sight for someone people, but very yummy!

Barney the Dinosaur – Pull Apart Cake 0

Barney may not be my favourite children’s tv show character, but I have to admit it was fun doing this and I think he looks pretty recognisable. Underneath the iced design are cupcakes – yes cupcakes! Mini and regular cupcakes.

I thought this was a brillant idea for those parents who always find themselves struggling to cut enough pieces of cake at their kid’s birthday while making a complete mess of themselves and the poor cake. Each child or adult (for those who can’t resist) takes as many cupcakes as they want, starting obviously from the outside-in.

Voila! A pull apart cake minus the mess, brilliant!

I used 3 different types of cupcakes: Oreo, Vanilla and Double Choc.
