The theme of this party is pretty obvious, Thomas the Tank Engine – for a boy who just about adores him. It was a pretty simple cake to make, but I love making kid’s birthday cakes.
It’s a moist chocolate cake frosted and filled with buttercream frosting. Why buttercream frosting? Well, when you’re using an edible image, your choices of frosting are limited.

This cake was for my cousin who turned 19 recently. I went with the old favourite, chocolate cake but decided to go for a chocolate mousse filling. Which suprisingly I have never made before, but it was so easy I think it will become one of my new favourite fillings!
So it’s a chocolate cake with a milk chocolate mousse filling topped off with a dark chocolate sour cream frosting. DELICIOUS!
