I recently did a course and we had to use lots of flowers and a make a colour flow piece of a image. I never like followi
ng the rules, particularly when it comes to cake designing. If you follow what you are supposed to do, tell me where is the creativity in that?! I know Easter is not here yet, but I was inspired and this is what I came up with…

I’m not such a huge fan of all the flowers you can make, but I am a fan of daisies! May be because they are one of the easiest flowers to make – apart from when they “melt”, because of the humidity!!
This was a chocolate cake with a vienna filling and covered with a decadent amount of dark chocolate ganache. I made this for a family friend who was having a few people over, because they complained the last time I made it for them they didn’t even get a second serving!

I have been experimenting making flowers with fondant and royal icing to use on cakes and cupcakes, creating an elegant look.
